Persephone's Garden Mocktail

1 min read

As we start spring, I thought I would pay reverence to Persephone and her journey from Underworld to garden.

This mocktail comes together really easily and if you don't have rose water, just skip it or add some brewed rose tea.

Ingredients:

1 mug of brewed chamomile tea

1 cup pomegranate juice

1 can your favorite seltzer

splash lemon juice

a few drops of culinary rose water

ice

Optional garnish: fresh strawberries

Instructions: Brew strong chamomile tea, like 12-15 minutes and allow to cool completely. When ready to serve, fill two glasses with ice and if using, add strawberries here. Pour pom juice into the bottom, next the seltzer layer and lemon juice, and finally top with chamomile tea and the drops of rose water. Serve layered for looks, or stir and serve for best flavor melding.

Variations: Want to add something stronger? Try sparkling rose wine or even a mild red wine. Want to make it magic? Use Butterfly Pea Tea powder - just hold back the lemon juice and add it to the beverage to make it transform in color to a vibrant purple.
